{"id":554,"date":"2012-02-02T10:50:40","date_gmt":"2012-02-02T14:50:40","guid":{"rendered":"http:\/\/www.eatcooklive.com\/?p=554"},"modified":"2012-02-04T19:15:43","modified_gmt":"2012-02-04T23:15:43","slug":"a-minnesota-dinner","status":"publish","type":"post","link":"https:\/\/www.eatcooklive.com\/?p=554","title":{"rendered":"A Minnesota Dinner"},"content":{"rendered":"<p>One of the things I miss most about living in Minnesota is my regular dinners with Mike and Fayaz. Every two to four weeks, for about three years before I moved to New York, Mike, Fayaz, and I would spend a weekend night cooking and eating elaborate meals. \u00c2\u00a0After eating, we&#8217;d often retire to Mike&#8217;s outdoor hot tub for scotch and cigars.<\/p>\n<p>On my recent trip to Minnesota for my sister and her new husband&#8217;s open house I was finally able to get in another amazing dinner with Mike.<\/p>\n<p>Being in a health\u00c2\u00a0conscious mind set, we\u00c2\u00a0abandoned\u00c2\u00a0our fatty four legged friends and\u00c2\u00a0we set out for a sea food meal. \u00c2\u00a0Mike took charge of the entree planing. \u00c2\u00a0Starting with the idea of seafood, Mike reached an amazing creation: \u00c2\u00a0crab and shrimp stuffing wrapped in delicious\u00c2\u00a0walleye. \u00c2\u00a0Mike cooked the the shrimp with a moderate amount of butter (okay, the healthy angle was more in thought than practice) mixed in some bread crumbs, some chicken stock, and the crab. \u00c2\u00a0The oceanic stuffing was placed into mounds on a baking sheet and wrapped the in beautiful fillets of walleye. \u00c2\u00a0While these baked I blanched a little bok choy, seasoned a little soy sauce which I cooked down for a little sauce for the veggies. \u00c2\u00a0In the final minutes of baking, Mike knocked out a little\u00c2\u00a0quinoa.<\/p>\n<p>The result? \u00c2\u00a0Amazing and decadent&#8211;as almost every meal Mike and I have made together. \u00c2\u00a0All with my favorite\u00c2\u00a0accompaniment\u00c2\u00a0of all: good conversation. \u00c2\u00a0Conversation with an old friend and a new. \u00c2\u00a0This&#8211;with Mike and a number of \u00c2\u00a0others&#8211;is what I miss most from Minnesota.<\/p>\n<p>&#8212;&#8212;-<\/p>\n<p>As you may have noticed, my\u00c2\u00a0prodigious posting of 2011 has faded. \u00c2\u00a0The good news is, after passing the New York bar, I am gainfully\u00c2\u00a0employed. \u00c2\u00a0Unfortunately, work manages to occupy nearly all my waking hours. \u00c2\u00a0(Increasingly even those of the weekend.) \u00c2\u00a0The job is great, but it leaves me with little time for culinary activities and even less for writing about it. \u00c2\u00a0The flood may be receding slightly and I hope February will yield most posts.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>One of the things I miss most about living in Minnesota is my regular dinners with Mike and Fayaz.
