{"id":576,"date":"2012-03-14T22:22:54","date_gmt":"2012-03-15T02:22:54","guid":{"rendered":"http:\/\/www.eatcooklive.com\/?p=576"},"modified":"2012-03-15T08:43:13","modified_gmt":"2012-03-15T12:43:13","slug":"lazy-curry","status":"publish","type":"post","link":"https:\/\/www.eatcooklive.com\/?p=576","title":{"rendered":"Lazy (But Fast) Curry"},"content":{"rendered":"<p>So after a prolonged\u00c2\u00a0hiatus, I&#8217;m finally getting up a post! \u00c2\u00a0It&#8217;s been a little crazy, so this lazy curry\u00c2\u00a0recipe that I&#8217;ve made a couple of times in the interim seems highly appropriate. \u00c2\u00a0It&#8217;s a great low cost alternative to take-out that takes less time than the delivery boy.<\/p>\n<p>Here is what you&#8217;ll need:<\/p>\n<ul>\n<li>6 scallions<\/li>\n<li>1 tbsp vegetable oil<\/li>\n<li>1 lb boneless chicken breasts<\/li>\n<li>3\/4 cup coconut cream<\/li>\n<li>3 tbsp Thai green curry paste<\/li>\n<li>3 tbsp chopped cilantro<\/li>\n<li>Noodles, rice, or (my personal\u00c2\u00a0preference\u00c2\u00a0<a href=\"http:\/\/en.wikipedia.org\/wiki\/Quinoa\">quinoa<\/a>)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>As your rice or\u00c2\u00a0noodles\u00c2\u00a0finish cooking: Just cut the scallions in to approximately half inch slices and cube the chicken. \u00c2\u00a0Heat the oil in a pan throw in the scallions and chicken for about 3 to 4 minutes until the chicken is browned. \u00c2\u00a0If you like heat, add a couple Thai chilies in with the scallions and chicken. \u00c2\u00a0Stir in the coconut cream and curry paste and cook for another five minutes or so. \u00c2\u00a0Turn off the heat and stir in the chopped cilantro.<\/p>\n<p>Now I like quinoa, but rice or noodle are a great pairing as well. \u00c2\u00a0 But whatever you use, in 15 minutes you&#8217;ll have a meal as good as your usual Thai take-out, only hotter and fresher.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>So after a prolonged\u00c2\u00a0hiatus, I&#8217;m finally getting up a post! \u00c2\u00a0It&#8217;s been a little crazy, so this lazy curry\u00c2\u00a0recipe that I&#8217;ve made a couple of times in the interim seems highly appropriate. \u00c2\u00a0It&#8217;s a great low cost alternative to take-out that takes less time than the delivery boy.
